Our mission
To make honest, small-batch hot sauce the slow way: naturally fermented in Stanwell Park from chillies grown close to home, with nothing artificial and no shortcuts.
Demented Fermenter exists to prove that the best hot sauce doesn't come from a factory or a flavour lab. It comes from time, salt and good chillies.
We ferment naturally. Heirloom chillies, organic garlic and onion and Olsson's sea salt go into the crock and we let wild fermentation do the work, building depth, brightness and balance that can't be rushed or faked. No vinegar shortcuts, no thickeners, no preservatives, nothing artificial. Every bottle is 100% natural and unfiltered.
We source close to home. Our chillies are grown in backyards and small plots around Stanwell Park and the Illawarra, a pocket of coast where the escarpment drops into the Pacific and the growing is generous. We build each blend around what's in season and what our neighbours are harvesting, then round it out with Australian natives like Otford Boys lemon myrtle and finger lime, native thyme, wild fennel and Tasmanian pepperberry.
We stay small on purpose. Small batches mean we can taste everything, adjust for the season and stand behind every bottle. Some blends change with the harvest. That's the point.
